Yummy banana muffins that are great for the entire family...even the picky eaters.
One week I buy bananas and they are gone in like 2 days, the next week I'll buy more and nobody in the house wants anything to do with them. I hate wasting food, so something has to be done with those neglected bananas. Banana muffins are a fam fav and I love that we can indulge without the guilt (me lol). We've added all kinds of extras to these muffins to switch it up and every time its a hit! Even with my little picky eater.
I love to make a batch in our baby cakes cupcake maker so the boys can have mini muffins that fit in their hands.
List of Ingredients
3-4 overripe bananas
1 1/2 cups (180g) flour
3/4 cups (150g) sugar
1 tsp baking soda
1 tsp baking powder
3/4 tsp salt
1 tsp cinnamon
1/2 cup (113g) melted butter
2 room temp eggs
1 tsp vanilla
1 cup walnuts (optional)

Step 1: Preheat Oven
Before we do anything, preheat your oven to 400 degrees and it would also be a good time to melt your butter as well.
Step 2: Mix Dry Ingredients
In a mixing bowl, add your flour, baking soda, baking powder, salt, and cinnamon. Give it a good mix to evenly distribute everything and sit to the side.
Step 3: Mix Wet Ingredients
Mash your bananas in a separate mixing bowl, add your eggs, sugar, melted butter, eggs, and vanilla. Give it a good whisk.
Step 4: Combine Ingredients
Add your dry ingredients to the wet and mix well. If you are adding walnuts or something else, be sure to add those in right before the batter is completely mixed together.
Step 5: Bake
Fill your muffin pan and place your muffins in the oven for 20 minutes. Let cool once done and let cool and serve!
I store these in an airtight container in the fridge for up to 3 days (well that's usually the longest they last). Just pop one out, warm it up a bit and a sweet healthy treat ready to eat.
